¾ cup butter-flavored shortening
1¼ cups firmly packed light brown sugar
1 egg
⅓ cup milk
1½ teaspoons vanilla flavoring
3 cups oats, quick or old-fashioned
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
1 cup raisins
1 cup coarsely chopped walnuts
Preheat the oven to 375° degrees. Lightly grease a baking sheet with a small amount of butter-flavored shortening. In a large bowl combine the shortening, brown sugar, egg, milk, and vanilla flavoring. Beat at medium speed with an electric mixer until well blended. In a medium-size bowl combine the oats, flour, baking soda, salt, and cinnamon. Mix these dry ingredients into the shortening mixture at low speed until blended. Stir in the raisins and walnuts. Drop by the rounded tablespoonful 2 inches apart onto the baking sheet. Bake for 10 to 12 minutes or until lightly browned.
