Meringue Cookies

These light delights will melt in your mouth.

2 egg whites

⅛ teaspoon salt

⅛ teaspoon cream of tartar

¾ cup granulated sugar

1 teaspoon clear vanilla extract

1 (16-ounce) package chocolate chips

½ cup chopped pecans

Preheat the oven to 300°. In a mixing bowl with an electric mixer beat the egg whites until they are stiff. Add the salt, cream of tartar, and sugar and continue to constantly beat until the mixture is thick. Fold in the vanilla, chocolate chips, and pecans. Drop in small mounds onto parchment paper–lined cookie sheets. Bake for 25 minutes.
