This basic recipe can be colored and shaped to fit the season, the occasion, the mood, or the holiday.
1 cup (2 sticks) butter, melted
1½ cups granulated sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon almond extract
2½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
ICING (OPTIONAL)
⅓ cup butter, softened
3 cups confectioners’ sugar
1½ teaspoons vanilla extract
2 tablespoons milk
In a large bowl thoroughly mix the butter, granulated sugar, egg, vanilla, and almond extract. Blend in the flour, baking soda, and cream of tartar. Cover and chill for 2 to 3 hours. Preheat the oven to 375°. Remove the dough from the refrigerator. Roll out the dough on a lightly floured surface. Cut into desired shapes and cook on a sheet pan for 9 to 11 minutes or until golden brown at the edges. Let the cookies cool before serving.
For the icing, in a mixing bowl blend the butter and confectioners’ sugar. Stir in the vanilla. Add the milk to make a spreading consistency. Spread the icing over the cooled cookies. Add food colorings and toppings to fit the occasion or the season.
