Buttermilk Pie

3 eggs, lightly beaten

1 cup granulated sugar

2 tablespoons all-purpose flour

½ cup butter, melted 1 cup buttermilk

½ teaspoon vanilla extract

½ teaspoon lemon extract

1 unbaked (9-inch) Pastry Piecrust (recipe on page 340)

Preheat the oven to 350°. In a medium-size mixing bowl combine the eggs, sugar, flour, and butter. Mix well. Add the buttermilk, vanilla, and lemon extract. Mix well. Pour the filling into the pie shell. Bake for 45 to 50 minutes until the pie is set and golden brown.
