A special friend and fellow caterer, Ruth Plympton, gave this recipe to Billie many years ago.
½ cup (1 stick) butter, softened
¾ cup granulated sugar
2 squares semisweet chocolate
1 teaspoon vanilla extract
2 eggs
1 (8-inch) baked pie shell
Whipped cream
In a mixing bowl with an electric mixer beat the butter and sugar until light and fluffy. In a saucepan on low heat or in the microwave melt the chocolate. Add the melted chocolate to the butter mixture. Stir in the vanilla and beat until smooth. Add the eggs, one at a time, beating after each addition for 5 minutes. Pour into the baked pie shell. Refrigerate until set, about 3 to 4 hours. Top with the whipped cream. Serve cold.
