This is a great favorite of Steve DeMoss, our neighbor.
3 egg whites
¾ cup granulated sugar
1 teaspoon baking powder
1 teaspoon vanilla
20 crumbled butter crackers
¾ cup chopped pecans 1 (8-ounce) container whipping cream
2 to 3 tablespoons sugar
Preheat the oven to 350°. In a medium-size mixing bowl beat the egg whites until stiff. With a spoon fold in the sugar and baking powder. Add the vanilla, crackers, and pecans. Stir until all the ingredients are moistened. Pour into a 9-inch pie pan. Bake at 350° for 25 minutes. Set aside to cool.
In a small mixing bowl beat the whipping cream and as it thickens add 2 to 3 tablespoons sugar until the cream reaches the desired consistency. Pour the whipped cream on top of the cooled pie.
