Blackberry Cobbler

2 to 3 cups fresh blackberries or 2 (16-ounce) packages frozen blackberries, thawed

1 cup plus 2 tablespoons granulated sugar

½ cup water

1 plus ¼ cups margarine

1 cup self-rising flour

1 plus ½ cups milk

Preheat the oven to 375°. In a medium-size bowl combine the berries, 1 cup of the sugar, and water. Pour the mixture in a 9 × 13-inch pan and dot with ¼ cup of the margarine. In a bowl combine the flour with the remaining 1 cup of the margarine and blend well with a fork. Add 1 cup milk and mix. The consistency of the mixture should be medium thin. If it is too thick, add the remaining ½ cup milk. Pour the mixture over the berries and sprinkle the remaining 2 tablespoons sugar over the batter. Bake for 35 to 40 minutes.

YIELD: 6 TO 8 SERVINGS
