Apple Dumplings

These dumplings are even more delicious when topped with ice cream and nuts. This was a favorite of my grandmother at our family dinners. They are also requested at our church potluck dinners.

2 large Granny Smith apples

½ cup (1 stick) butter

1 cup granulated sugar

¾ cup water

1 teaspoon vanilla extract

1 (8-ounce) can crescent rolls

Cinnamon-sugar mix for sprinkling

Preheat the oven to 350°. Peel, core, and quarter the apples. In a saucepan over medium heat melt the butter and sugar. Add the water and vanilla when the butter has melted.

Roll an apple quarter in a triangle of each of the crescent rolls. Press the dough together to cover most of the apple quarter. Repeat the rolling until you have used all eight apple quarters. Place the apple dumplings in a 9 × 13-inch baking dish. Cover with the butter mixture. Bake for 35 to 45 minutes or until a golden brown. Mix enough cinnamon and sugar together to lightly sprinkle each dumpling before cooling.
