Apple Fritters

1½ cups all-purpose flour

1 tablespoon granulated sugar

2 teaspoons baking powder

½ teaspoon salt

2 eggs, beaten

½ cup milk

3 cups plus 1 tablespoon vegetable oil

3 cups peeled, finely chopped apples

½ cup confectioners’ sugar

In a large mixing bowl combine the flour, sugar, baking powder, and salt. Mix well. Add the eggs, milk, 1 tablespoon of the oil, and the apples. Mix by hand until combined and moist. Heat the remaining 3 cups oil in a heavy skillet or pot to 350°. To make the fritters, spoon about ¼ cup of the batter at a time into the hot oil and cook for 3 to 4 minutes until golden brown. Drain well. Roll in the confectioners’ sugar while still hot.
