3 eggs, separated
½ cup granulated sugar
Pinch of salt
1 teaspoon vanilla flavoring
2 tablespoons confectioners’ sugar
In the top of a double boiler over hot water scald the milk. In a small bowl lightly beat the egg yolks. Add these to the milk, stirring constantly. Add the granulated sugar and salt. Continue to cook and stir until the mixture thickens and coats the back of a spoon. Stir in the vanilla. Remove from the heat. Pour the custard into a serving dish and place in the refrigerator to chill. Serve topped with “floating islands,” which are made by beating the egg whites with the confectioners’ sugar. Drop this by the spoonful on top of the custard.
