This topping is delicious on top of Cherry Cheese Pie (page 326) and ice cream.
½ cup peach or apricot preserves
¼ cup flaked coconut
2 tablespoons orange-flavored liqueur
2 teaspoons cornstarch
In a small saucepan on medium-low heat combine the preserves, coconut, orange liqueur, and cornstarch. Cook, stirring continuously, until thickened. Chill thoroughly.
Hint: When using this to top a pie, arrange fresh orange slices on the top of the pie and drizzle with the sauce.
YIELD: ½ CUP
