Seven-Minute Icing

3 egg whites

1⅔ cups granulated sugar

¼ cup white corn syrup

¼ cup coconut milk (or water)

Dash of salt

1 teaspoon vanilla or lemon juice (either ingredient accomplishes the desired flavor)

3 to 4 cups freshly grated coconut

In a double boiler over medium heat cook the egg whites, sugar, corn syrup, coconut milk, and salt for 7 minutes, beating with a hand mixer until peaks begin to drop off a spoon. Remove from the heat. Add the vanilla or lemon juice. Spread the icing between the layers and on the sides.

YIELD: ICING FOR 1 CAKE
