Peanut Butter Balls

2 egg yolks

1 teaspoon vanilla

⅛ teaspoon salt

1 cup crunchy peanut butter

1 cup plus 1 tablespoon confectioners’ sugar

⅔ cup powdered milk plus some for rolling

In a medium-size bowl combine the egg yolks, vanilla, and salt. Mix well. Add the peanut butter, confectioners’ sugar, and powdered milk. Mix thoroughly. Knead the mixture with your fingers until it is firm. Shape into 1-inch balls. Roll in powdered milk. Refrigerate for at least one hour before serving.

YIELD: 30 PEANUT BUTTER BALLS
