Miss Betty Rob’s Southern Punch

Miss Betty Rob Golson’s son, Henry, and I were schoolmates in Fort Deposit, Alabama, until my parents and I moved to Foley in 1966 when I was beginning the eleventh grade. Miss Betty Rob and my mother were best friends, and my mother and I continued to keep in touch by visits, phone calls, and mail until Miss Betty Rob passed away at the age of ninety in September 2003. My mother and I always looked forward to sitting with Miss Betty Rob and her son in their huge family room looking out the glass doors into a beautiful, green pecan orchard, where we caught up on news and sipped Miss Betty Rob’s Southern Punch that she always served when we came. She was a dear friend to both my mother and me, and she taught me everything I know about the Bible when she was my Sunday school teacher. Because of her, I can still name in order all of the books of the Old and New Testaments, and I can still repeat from memory many of the Bible verses she taught us.

1 (12-ounce) can frozen pink lemonade

1 (12-ounce) can frozen orange juice

½ container Crystal Light iced tea mix Water

In a large pitcher mix the lemonade, orange juice, and iced tea mix. Add water to taste. Chill for at least 2 hours prior to serving. Serve over ice and add a sprig of mint if desired.

YIELD: 1½ TO 2 QUARTS (6 TO 8 CUPS)
