Green Tomato Marmalade

1 cup water

2 thinly sliced oranges

1 thinly sliced lemon

6 large green tomatoes (about 4 pounds), chopped

4 cups granulated sugar

½ teaspoon salt

In a Dutch oven over medium heat cook the water, oranges, and lemon for 17 to 20 minutes or until the fruits are tender. Add the tomatoes, sugar, and salt, stirring until the sugar dissolves. Bring to a boil, stirring constantly. Reduce the heat to low and simmer, stirring occasionally, for 3 hours and 30 minutes or until the mixture thickens.

Pour the hot mixture into hot sterilized jars, filling each to about ¼-inch from the top. Remove the air bubbles. Wipe the jar rims. Cover at once with metal lids and screw on the bands. Process the jars in a boiling water bath for 10 minutes. Remove from the heat and allow them to cool.
