Angel Hair Pasta with Fresh Herbs

While not one to make in the slow cooker, this simple recipe is an example of the many ways you can enjoy pasta with different combinations of herbs. Use fresh thyme, rosemary, or sage—or a blend of these. Try dill. Fresh herbs are preferable to dried. If you like anchovies, you’re in luck. They give this simple dish an added depth.

Makes 4 to 6 servings.

1 lb angel hair pasta (regular or whole grain)

Extra virgin olive oil

2 tablespoons rinsed and chopped fresh parsley

1 tablespoon lemon zest

1 anchovy, mashed (optional)

Salt

Parmesan cheese, grated

1. Bring a large pot of water to boil. Add pasta and cook until al dente, approximately 5 minutes. Drain pasta in a colander and return to pot.

2. Drizzle with olive oil until lightly coated. Add parsley, lemon zest, and anchovy (if desired). Stir until combined. Season with salt to taste. Spoon into a bowl, sprinkle with Parmesan cheese, and serve.
