A Little Lemon, A Lot of Luvin’

Citrus fruits are at the top of the list of foods that those on low-acid diets should avoid. However, the zest from lemons and oranges can be added to recipes—in moderation—to add flavor, freshness, and vitamins.

Makes 4 servings.

11/2 lbs fish filets (white fish like tilapia)

Salt to taste

1 medium white onion, chopped

5 tablespoons parsley, chopped

2 teaspoons lemon zest (finely grated rind)

2 teaspoons orange zest (finely grated rind)

4 teaspoons olive oil

Parsley (for garnish)

Non-stick cooking spray

1. Spray the inside of the slow cooker liberally with non-stick spray. Season the filets with salt, and place fish in the slow cooker.

2. Add the onion, parsley, lemon zest, orange zest, and oil. Cover and cook on Low for 1 to 2 hours.

3. Serve garnished with fresh parsley.
