A simple dish, for sure, but you’ll find the flavors meld beautifully. The fresh ginger is the key ingredient.
Makes 4 to 6 servings.
4 medium zucchini, sliced into 1/4-inch rounds and then cut in half to form half moons
1 tablespoons fresh ginger, grated
2 cloves garlic, minced
2 tablespoons water
3 lbs firm white fish, like mahimahi, cubed
Sprigs of fresh parsley
Non-stick cooking spray
1. Spray the inside of the slow cooker with non-stick cooking spray.
2. In a large bowl, combine zucchini, ginger, garlic, and water. Stir to combine and add to the slow cooker. Cook on Low for 3 to 4 hours or on High for about 2 hours.
3. Uncover; if you are cooking on High, reduce heat to Low; and add fish cubes. Cover again and cook an additional hour or longer, until fish is cooked through and tender. Garnish with the parsley.
