If you love beets, you’ll love this method of cooking them. It “beats” waiting a long time for them to cook in boiling water!
2 bunches beets with tops (about 2 pounds)
2 tablespoons olive oil
1 clove garlic, minced
Greens from the beets, washed and cut into 1-inch pieces
Salt to taste
1. Scrub the beets clean and cut into 1-inch pieces.
2. Heat the oil in a medium skillet over medium-high heat and add the garlic. Cook, stirring constantly, about 1 minute. Add the beet greens and continue cooking and stirring until greens are just wilted, about 3 minutes.
3. Put beets into the slow cooker, topping with the greens. Cover and cook on Low for 4 to 5 hours, or on High for 3 to 4 hours, or until beets are soft.
4. Season with salt and serve.
