Sweet Sweet Potatoes

Sometimes it’s nice to have a vegetable dish that has a bit of sweetness to it. Besides complementing lean meats nicely, a dish like this also pairs very well with a hearty grain like barley or quinoa.

Makes 4 to 6 servings.

2 pounds sweet potatoes

1/4 cup butter, cubed

1/4 cup maple syrup

1/4 cup packed brown sugar

Fresh basil, chopped, for garnish (optional)

Non-stick cooking spray

1. Spray the inside of the slow cooker liberally with non-stick cooking spray.

2. Put sweet potato cubes in slow cooker. In a small saucepan, combine the butter, syrup, and brown sugar and cook, stirring constantly, over medium-high heat until bubbly, about 5 minutes. Pour over potatoes.

3. Cover and cook on Low for 5 to 6 hours or on High for 2 to 3 hours, or until potatoes are tender. Before serving, drizzle with maple syrup. Garnish with basil, if you want an interesting contrast to the sweetness.
