Brown Rice and Mixed Vegetables

This is a super-simple way to prepare rice with nutritious vegetables.

Makes 6 servings.

4 cups brown rice

1 10-oz package of frozen mixed vegetables or 1 large can or 2 small cans of vegetables of your choice

3 tablespoons butter, cut into small pieces

4 cups low-sodium chicken broth

4 cups water

Non-stick cooking spray

1. Spray the inside of the slow cooker liberally with non-stick cooking spray. Add the rice to the slow cooker. Add vegetables and stir to combine. Put the pieces of butter over the rice, then add the broth and water.

2. Cover and cook on Low for 4 to 6 hours or on High for 2 to 3 hours. To keep rice from drying out too much or burning, check it about an hour before it should be ready, and if it’s looking good, turn the cooker to Warm. It can cook through on Warm for several hours.
