11. Carrot Halwa
Move aside carrot cake! This carrot halwa gives you all new reasons to load up on carrots on your next grocery run!

Ingredients:
Halwa

4 cups carrot, grated

4 cups milk

6 tbsp. ghee or unsalted butter

½ cup sugar

1 tsp cardamom powder

¼ cup walnut, roughly chopped

5 almonds, blanched and slivered
Garnish

Slivered almonds
-
Slivered cashews
Directions:
In a medium saucepan, heat ½ a tsp of ghee or butter and toast the slivered almonds. Once they turn brown, remove and set aside.
Wipe off the excess butter and add in the milk. Bring to a boil & allow to cook till the milk has reduced in half to about 2 cups.
In another frying pan, heat the rest of the ghee or butter and add in the carrots. Fry for about 7-8 minutes until the carrots become tender and darken in color.
Add in the milk and continue cooking until the mixture is no longer wet and liquid. About 8-10 minutes.
Add in the sugar, walnuts and cardamom. Cook for an additional 3 mins.
Serve warm garnished with almonds and cashews!
