Smoked Tri-Tip

  1. When you are ready for cooking, set the Traeger temperature to approximately 225F, add the wood pallets and let it preheat, make sure to close the lid for approximately 15 minutes. For maximum flavor, use may would like to use the Super Smoke option if available
  2. Now, combine salt along with black pepper. Make sure to Season all the sides of beef with heavy coat of salt and black pepper mixture.
  3. Now, place tri-tip on grill and cook the same until it reached a temperature of around 130 F, this would take around 60-90 minutes.
  4. When the tri-tip reaches temperature of 130F, pull it off grill and then wrap it properly in foil.
  5. Now, you need to set the Traeger temperature to 500F and let it preheat, make use to close the lid as well for approximately 15 minutes.
  6. When the grill comes to that temperature, remove the tri-tip from the foil and sear them for about 4 minutes on every side.
  7. Switch off the grill and let it rest for approximately 10-15 minutes. Slice them nicely against grain to serve.
