IMAGINE A CHAR-GRILLED FLANK STEAK SURROUNDED BY freshly picked and grilled onions, drizzled with the flavors of smoky garlic, cream, and cilantro. Heaven! It also tastes great with grilled chicken, pork, steak, or shellfish marinated in a combination of 6 tablespoons olive oil, 3 tablespoons fresh lime juice, and garlic salt to taste. SMOKED GARLIC and
CILANTRO CREAM SAUCE

MAKES ABOUT 2½ CUPS

2 cups heavy cream

½ cup fresh cilantro leaves, plus more for garnish

3 tablespoons fresh lime juice

½ teaspoon kosher or sea salt

6 garlic cloves, smoked (see page 9)

In a blender or food processor, combine all the ingredients and process until smooth.

Transfer the puree to a medium-size saucepan over medium-high heat and cook until the sauce begins to bubble. Serve immediately.
