A GARDENER’S POUND

 

 

IN WRITING RECIPES, WE HAVE TO BE AS PRECISE AS WE CAN BE, so we call for quantities of asparagus or greens in recipes in weight measurements. Yet if you’re harvesting those vegetables from the garden, how can you gauge a pound without a kitchen scale?

Use the following as guidelines for measuring 1-pound increments:

• ASPARAGUS STALKS: about what you can encircle with both hands

• BEANS OR PEAS IN THE POD: about 4 cups

• BROCCOLI: about 1 large crown

• CHERRY TOMATOES: about 2 cups

• LOOSE, LEAFY GREENS (SPINACH): about 6 cups or handfuls

• BUNCH GREENS (SWISS CHARD): about 2 bunches
