GROWING EDAMAME

Although tomatoes, corn, and bell peppers have been gardeners’ favorites for generations, edamame or soybeans are quickly claiming their spot. Edamame is the Japanese name for soybeans eaten fresh, rather than dried. You plant them just as you do green beans. After danger of frost, plant the seeds in full sun about 1 inch deep and 2 inches apart. We like to plant them in large pots around a centered wire frame or trellis so the bean stalks can easily be trained upwards as they grow. A cool weather crop like peas, they taste best in the pod in spring or fall. There are about 3 soybeans in each pod; pick them when the soybeans within the pod are young and tender, about ½ inch long.
