1 pound bacon, cut into small dice
1 cup diced onions
2 tablespoons Swerve confectioners’-style sweetener or equivalent amount of liquid or powdered sweetener ( see here )
2 cups beef bone broth, home-made ( see here ) or store-bought
1. Cook the bacon in a large cast-iron skillet over medium-high heat until crisp-tender, about 10 minutes. Add the diced onions and cook for about 5 more minutes.
2. Add the sweetener and broth and bring to a simmer, scraping bits off the bottom of the pan. Increase the heat to high and boil, while stirring, until the liquid has evaporated and the mixture has the texture of a spreadable marmalade, about 10 minutes.
3. Store in a sealed jar in the fridge for up to 6 days.
