1 cup MCT oil or extra-virgin olive oil

20 cloves garlic, peeled

4 sprigs fresh thyme or other herb of choice

Place the oil, garlic, and herbs in a small saucepan. Poach on low heat until the garlic is very soft, 45 to 60 minutes. Store in an airtight container in the fridge for up to 1 month.
