image prep time: 10 minutes (not including time to make the buns) cook time: 5 minutes yield: 2 servings

2 tablespoons coconut oil

4 Keto Buns ( see here )

4 large eggs

½ teaspoon fine sea salt

2 slices bacon, fried and crumbled (omit for vegetarian)

2 tablespoons sliced green onions

¼ cup Easy Basil Hollandaise ( see here ) (optional)

1. Heat the oil in a skillet over medium-low heat.

2. Cut a 1½-inch circle in the center of each keto bun. Place the buns with the holes as well as the cutouts in the warm skillet. Crack an egg into the middle of the hole in each bun. Sprinkle each egg with salt, bacon crumbles, and green onions.

3. Cover and cook until the eggs are set in the middle, about 5 minutes. Remove from the skillet and serve. To up the keto level of this recipe, serve each portion with 2 tablespoons of basil hollandaise.
