1 pound ground pork
1 tablespoon untoasted, cold-pressed sesame oil
6 cups finely shredded cabbage
2 teaspoons minced garlic
1 tablespoon minced fresh ginger
1 tablespoon coconut aminos or wheat-free tamari
1 teaspoon fish sauce (optional)
¼ cup chopped green onions, for garnish
1. Place the pork and oil in a large cast-iron skillet over medium-high heat and cook, crumbling the meat with a wooden spoon, until cooked through, about 10 minutes. (Do not drain the drippings from the pan.)
2. Add the cabbage, garlic, ginger, coconut aminos, and fish sauce, if using, to the skillet. Sauté until the cabbage is soft, 3 to 5 minutes.
3. Divide among six plates or bowls and serve garnished with the green onions.
