image prep time: 5 minutes, plus 3 hours to freeze yield: 4 lollies (1 per serving)

If you don’t normally sweeten your tea, this recipe is perfect for you without sweetener. But if you need a little sweetness, feel free to add 2 to 4 tablespoons of Swerve confectioners’-style sweetener or a few drops of stevia. Adjust the sweetness to your liking before freezing. During freezing, the tea and spices may separate, giving you a punch of concentrated flavor (that I love!) at the tops of your pops.

Vanilla beans are a great way to load up on phytonutrients on a ketogenic diet. The seeds also provide an amazing flavor! I always keep a large, tightly sealed pack in my fridge for additions to desserts.

2 to 3 chai tea bags

2 cups boiling water

½ cup unsweetened, unflavored cashew milk, homemade ( see here ) or store-bought (or full-fat coconut milk for nut-free)

2 to 4 tablespoons Swerve confectioners’-style sweetener or equivalent amount of liquid or powdered sweetener ( see here ) (optional)

¼ teaspoon ground cinnamon

Seeds scraped from 1 vanilla bean, split lengthwise (optional)

special equipment:

4 ice pop molds

1. Place the teabags in the boiling water and allow to steep for 3 minutes. Remove the teabags. Stir in the cashew milk, sweetener (if using), cinnamon, and vanilla seeds (if using). Allow to cool to room temperature.

2. Pour into ice pop molds and freeze until set, about 3 hours. Store in the freezer for up to 1 month.
