450g frozen peas
8 spring onions, chopped
2 garlic cloves, crushed
600ml vegetable stock
juice of ½ lemon
2 slices (50g) lean cooked ham
chopped fresh parsley
2 tablespoons low-fat natural yogurt
1 Put the frozen peas, spring onions, garlic and vegetable stock into a large saucepan. Bring to the boil and simmer for 10 minutes.
2 Pour the soup into a food processor, add the lemon juice and blend until smooth.
3 Return the soup to the pan and adjust the consistency, adding a little more stock if required.
4 Cut the ham into thin strips, add to the soup and heat through. Just before serving stir in some chopped fresh parsley and swirl the yogurt on top.
TIP For a minty-flavoured soup use frozen minted peas
