Pork and pepper fajitas

225g lean pork fillet, cut into strips

1 garlic clove, crushed

1 red and 1 green pepper, deseeded and sliced

1 red onion, sliced

2 tablespoons fajita spice mix

2 tablespoons chopped fresh chives

juice of 1 lime

8 cherry tomatoes, halved

salt and freshly ground black pepper

for serving

4 flat round tortilla breads

2 tablespoons low-fat yogurt

1 Heat a non-stick wok, and dry-fry the pork and the garlic until sealed. Season with salt and black pepper.

2 Add the sliced red and green peppers, red onion and fajita mix and cook for a further 2–3 minutes.

3 Add the chives, lime juice and cherry tomatoes, and mix well.

4 Warm the tortilla breads under the grill or in a microwave. Fill with the pork mixture, add the yogurt, then roll up and serve.


TIP The lime gives this Mexican-style dish a zesty finish
