Piri piri chicken

1 red onion, diced

4 × 175g skinless chicken breasts, diced

1 teaspoon ground coriander

1 teaspoon Schwartz pilau rice seasoning

1 teaspoon sesame seeds

1 teaspoon vegetable stock powder

1 teaspoon cracked black pepper

for serving

juice of 1 lemon

4 tablespoons 3% fat Greek yogurt

1 Heat a non-stick wok, and dry-fry the onion until soft. Add the chicken breasts and cook until slightly coloured.

2 Add the remaining ingredients and toss well to make sure the chicken browns on all sides.

3 When the chicken is cooked through, add the lemon juice. Remove from the heat and stir in the yogurt. Serve with mixed salad leaves.


TIP Adding fresh lemon to the hot pan adds a really zingy flavour to the chicken
