1 crisp lettuce
1 cucumber, diced
16 cherry tomatoes, halved
1 red onion, diced
1 red pepper, deseeded and diced
75g 50% less fat Le Roule garlic and herb cheese
12 black seedless grapes, halved
for the dressing
150ml cloudy apple juice
2 tablespoons white wine vinegar
1–2 teaspoons Dijon mustard
1 tablespoon chopped fresh parsley
salt and freshly ground black pepper
1 Shred the lettuce and place in a large serving bowl. Add the cucumber, tomatoes, onion and red pepper.
2 Cut the cheese into small pieces and scatter on the salad along with the grapes.
3 Mix together the dressing ingredients in a bowl and pour over the salad.
TIP For a variation, roast the red pepper in the oven and allow to cool before adding to the salad
