1 red eating apple
juice of 1 lemon
1 ripe mango
2 large salad onions, sliced
8 celery sticks, chopped
115g green seedless grapes, halved
2 tablespoons 0% fat Greek yogurt
1 tablespoon low-fat salad cream
1 tablespoon dried cranberries
½ tablespoon pumpkin seeds
salt and freshly ground black pepper
1 Cut the apple into quarters, then cut away the core and discard. Chop the flesh into small pieces and place in a mixing bowl. Add the lemon juice and toss well to coat.
2 Peel the mango, cut the flesh away from the centre stone, then chop it into the bowl. Add the onions, celery and grapes and mix well.
3 Mix together the yogurt and salad cream and add to the salad. Season to taste with salt and black pepper.
4 Spoon into a serving dish, and sprinkle the dried cranberries and pumpkin seeds over the top.
TIP You can leave out the pumpkin seeds to reduce the calories and fat even more
