4 × 120g gammon steaks
60ml white wine
250g mixed mushrooms
4 tablespoons 3% fat Greek yogurt
squeeze of lemon juice
1 tbsp chopped fresh parsley
freshly ground black pepper
1 Heat a non-stick griddle pan, and cook the gammon steaks quickly on both sides. Remove from the pan and keep warm.
2 Deglaze the pan with the white wine and cook until the mixture is reduced by half. Stir in the mushrooms and cook until soft. Remove the pan from the heat and stir in the yogurt. Add the lemon juice and black pepper to taste. Stir in the parsley and serve.
3 Serve the gammon steaks with the creamy mushroom sauce.
TIP Gammon is a good standby – store in the freezer and defrost in a bowl of water
