225g (dry weight) pasta shapes
1 red onion, finely chopped
2 garlic cloves, crushed
225g cooked peeled prawns
1 × 400g can chopped tomatoes
1 red chilli, deseeded and finely chopped
salt and freshly ground black pepper
2 tablespoons chopped fresh coriander to garnish
1 Cook the pasta shapes in boiling salted water.
2 Meanwhile heat a non-stick frying pan, and dry-fry the red onion for 2–3 minutes until soft. Add the garlic and cook for 2–3 minutes more.
3 Add the tomatoes and chilli, and bring the sauce to a gentle simmer. Add the prawns and season to taste with salt and black pepper. Continue to cook for 3–4 minutes more, making sure the prawns are heated through.
4 Drain the pasta and pour into a serving dish. Spoon the sauce over the pasta and sprinkle with chopped coriander.
TIP For variations on this pasta dish, try substituting chicken or roasted vegetables for the prawns
