250g Quorn Cumberland sausages
1 red onion, sliced
1 tablespoon chopped fresh thyme
1 teaspoon wholegrain mustard
2 tablespoons red wine
1 × 400g can chopped tomatoes
freshly ground black pepper
1 Heat a non-stick frying pan, and dry-fry the sausages until lightly browned. Add the sliced onion and continue cooking until soft.
2 Add the remaining ingredients and bring to a gentle simmer. Cover and simmer for 10 minutes until the sausages are cooked through.
3 Just before serving, season with black pepper and serve with vegetables of your choice.
TIP As an alternative you can substitute Quorn fillets or meatballs for the sausages
