Honey and lemon roast chicken

2 × 150g chicken breasts

juice of 1 lemon

2 teaspoons runny honey

salt and freshly ground black pepper

1 Preheat the oven to 200C, 400F, gas mark 6

2 Cut the lemon in half. Season the chicken breasts on both sides with salt and black pepper and place in a non-stick roasting tin.

3 Squeeze the lemon juice over the chicken and place the lemon flesh under each chicken breast. Drizzle with the honey and roast in the oven for 25–30 minutes until cooked. Serve with dry-roasted vegetables.


TIP You can also use chicken quarters. Remember to trim away as much skin as possible
