1 × 450g piece lean pork fillet
120g Quark soft cheese
1 tablespoon chopped fresh chives
1 garlic clove, crushed
200g pancetta
salt and freshly ground black pepper
1 Preheat the oven to 200C, 400F, gas mark 6.
2 Remove any remaining visible fat from the pork. Place the pork on a chopping board. Using a sharp knife, cut the fillet down the centre but not all the way through. Open up the pork to form a flat piece of meat.
3 Mix together the Quark, chives and garlic and season with salt and black pepper. Spread the Quark mixture over the pork and roll up the pork.
4 Wrap the pancetta around the rolled-up pork and place in a non-stick roasting tray. Roast in the oven for 20–25 minutes until fully cooked.
5 Remove from the oven and allow it to rest for 5 minutes before carving. Serve with a selection of vegetables.
TIP Fresh basil is a good substitute for chives
