50g (dry weight) noodles
1 vegetable stock cube
low-calorie oil spray
1 garlic clove, crushed
3 spring onions, chopped
1 × 2cm piece fresh ginger, peeled and grated
100g lean pork mince
1 tablespoon light soy sauce
1 Cook the noodles in a pan of boiling water with the vegetable stock cube.
2 While the noodles are cooking, heat a non-stick frying pan and lightly spray with oil spray. Add the garlic, spring onions and ginger to the hot pan and cook until soft. Stir in the pork and cook until brown. Add the soy sauce.
3 Drain the noodles, transfer to a serving plate and spoon the pork mixture over them.
TIP Add soy sauce to taste before serving if you want a spicier touch
