Chilli marinated steak

1 × 120g beef steak, rump or sirloin

salt and freshly ground black pepper

for the marinade

2 tsps cider vinegar

1 garlic clove, crushed

½ red chilli, finely sliced

2 tsps grainy mustard

2 tsps chopped fresh mint

2 tsps chopped fresh parsley

1 Remove any visible fat from the steak, cut the steak into 4 or 5 slices and season with salt and black pepper.

2 Place the marinade ingredients in a bowl and mix well. Add the steak slices, coating them on all sides. Cover and chill in the refrigerator for 1 hour.

3 Remove the steak from the refrigerator 30 minutes before cooking.

4 Five minutes before cooking, preheat a health grill or conventional grill.

5 Cook the steak slices for 5 minutes in the health grill or 5–8 minutes each side under a conventional grill, or to your taste.

6 For a dinner option, serve with 200g boiled new potatoes sprinkled with soy sauce, and salad or fresh vegetables of your choice.


TIP For a fuller flavour, leave the steak to marinate overnight
