Pork with balsamic peppers and noodles

4 × 120g lean pork steaks, all visible fat removed

1 medium red onion, finely chopped

1 garlic clove, crushed

1 red and 1 yellow pepper, deseeded and diced

1 tablespoon good balsamic vinegar

1 tablespoon runny honey

200g pak choi or spinach

salt and freshly ground black pepper

200g (dry weight) noodles

1 Heat a non-stick wok. Cut the pork steaks into strips.

2 Add the onion and garlic to the hot wok and dry-fry until soft. Add the pork and peppers, tossing well. When the meat is sealed, add the balsamic vinegar and honey.

3 Add the pak choi or spinach and season with a little salt and plenty of black pepper.

4 Meanwhile, cook the noodles in boiling water or as directed on the packet, then drain.

5 Serve the pork on a bed of noodles.


TIP Cut the pork into similar-sized strips to ensure they cook evenly
