Pork and pineapple burgers

450g lean minced pork

2 teaspoons vegetable stock powder

1 × 137g can chopped pineapple, drained

1 tablespoon chilli sauce

4 spring onions, finely chopped

freshly ground black pepper

for serving

4 wholegrain rolls

salad leaves

4 tablespoons tomato salsa

1 Preheat a conventional or health grill.

2 Place all the ingredients in a mixing bowl and season with black pepper. Shape the mixture into 4 burgers.

3 Cook the burgers under the hot grill or in a health grill for 10–15 minutes, turning regularly. Test to see if they are cooked through to the centre by inserting a knife.

4 Serve each burger in a wholegrain roll with salad leaves and tomato salsa.


TIP You can substitute minced chicken or turkey for the pork
