Peppered salmon with noodles

80g noodles

4 × 150g salmon fillets

4 teaspoons grainy mustard

salt and freshly ground black pepper

green salad leaves to serve

for garnishing

2 tablespoons low-fat natural yogurt

sprig of fresh mint

1 Preheat a non-stick frying pan and lightly spray with oil spray. Put the noodles in a pan of boiling water to cook while you prepare the salmon.

2 Season the salmon fillets with salt and plenty black pepper, then using a knife, spread the mustard over the top of each fillet.

3 Cook the salmon fillets skin-side down in the frying pan for 7–8 minutes over a moderate heat. Flip the salmon over and continue cooking for 7 minutes. Reduce the heat and cover with a lid to allow the fish to steam and finish cooking.

4 Drain the noodles and arrange in a serving dish. Top with the salmon fillets. Garnish with the yogurt and some fresh mint, and serve with green salad leaves.


TIP You can wrap these salmon fillets in foil, then cook in a moderate oven and allow to cool for a picnic dish or packed lunch
