Low Gi Christmas pudding

300g luxury mixed dried fruit

4 tablespoons brandy, rum or beer

75g plain flour

1 teaspoon mixed spice

½ teaspoon ground cinnamon

50g fresh granary breadcrumbs

50g dark brown sugar

2 teaspoons gravy browning

zest of ½ lemon

zest of ½ orange

100g grated cooking apple

100g grated carrot

1 tablespoon lemon juice

2 eggs, beaten

4 tablespoons skimmed milk

2 tablespoons molasses

4 tablespoons brandy for reheating

1 Soak the dried fruit in the alcohol overnight. The next day, place the fruit in a large mixing bowl. Add the ingredients one at a time, mixing well.

2 Spoon the mixture into a 1.2 litre pudding basin.

3 Cook the pudding. To steam, cover with foil and steam gently for 3 hours. (To reheat, steam for 1–2 hours.) To microwave, cover with clingfilm and place an upturned plate on top, then cook on high speed for 5 minutes. Allow to stand for 5 minutes, then cook for a further 5 minutes. (To reheat, cook on high power for 5 minutes.)


TIP Soaking the fruit overnight gives a rich, moist pudding with lots of flavour
