8 × 47g fresh chicken drumsticks
2 garlic cloves, crushed
1 tablespoon tandoori powder
2 teaspoons ground coriander
300ml 3%fat-yogurt
1 teaspoon ground ginger
salt and freshly ground black pepper
1 Preheat the oven to 200C, 400F, gas mark 6.
2 Pull away the skin from the chicken drumsticks and discard.
3 Mix the spices with the garlic and yogurt and place in a shallow dish. Press the chicken into mixture, coating all sides. Allow to marinate for 30 minutes.
4 Transfer the chicken to a non-stick baking tray and place in a hot oven for 30 minutes until fully cooked.
TIP Removing the skin from the drumsticks not only reduces the fat content but also allows the spices to penetrate the meat
