225g dried mixed fruit
150ml hot Earl Grey tea
100g glacé cherries, chopped
175g dark brown sugar
350g self-raising flour
1 egg, beaten
2 teaspoons mixed spice
1 Soak the dried mixed fruit in the hot tea overnight.
2 Preheat the oven to 150C, 300F, gas mark 2. Lightly grease 4 small ovenproof dishes with a little low-fat spread.
3 Place the soaked fruit (and tea) in a mixing bowl. Reserve a few glacé cherries for decoration and add the remainder to the mixing bowl. Add the sugar, flour, egg and mixed spice and mix well. Spoon the mixture into the ovenproof dishes and top with the reserved cherries. Place in the centre of the oven and bake for 45–60 minutes until fully cooked.
4 When cooked, allow to cool in the dishes, then wrap in cellophane and store in an airtight container. To serve cut each tea cake into 4 slices.
TIP Store the cakes in an airtight container for 2 days to improve the flavour
