4 large mushrooms
250g Quark low-fat soft cheese
4 spring onions
1 garlic clove, crushed
1 tablespoon chopped fresh herbs
a little fresh lemon zest
20g grated low-fat vegetarian cheese
salt and freshly ground black pepper to taste
1 Preheat the oven to 200C, 400F, gas mark 6.
2 Remove the stalks from the mushrooms. Finely chop the stalks and mix with the remaining ingredients except the grated cheese.
3 Spoon the mixture into the mushrooms and top with the grated cheese.
4 Bake in the oven for 15 minutes or until golden brown.
TIP You can make these mushrooms in advance and keep refrigerated for up to 2 days
